Fairly Virtuous (but good) Whole Grain Peanut Butter Cookies
(from the Nutrition Action Health Letter)

*Mix
1 1/2 C whole grain flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt

*Mix
3/4 C natural peanut butter (I used chunky, what else)
1/3 C canola oil

*Add to PB mixture
1/2 C white sugar
1/2 C packed brown sugar (I used a bit less sugar, and could have even reduced it more)
1 egg

Add flour mixture to PB/sugar mixture. One inch balls flattened with fork. 350 F for 15 mins.
Makes 45 cookies. (120 calories each.)
