I made up this simplified recipe. You could add other things to it, like carrots, potatoes, swiss chard etc... (for the record, I don't make a habit of this sort of meal - I rarely buy red meat. But on a cold day, it hits the spot.)

Easy Lamb Stew
between 1/2 to 1 kg (about 1.5 lbs) "lamb stew" (pre-chopped lamb for stewing)
2 C chicken broth
2 leeks
4 cloves garlic
1 can drained white kidney beans (or other bean)
1 can chopped tomatoes
salt and pepper
1 tsp dry thyme

salt and pepper meat and brown on all sides for 10 mins, then remove from pan
put chopped leeks in pan (white part), sauté 10 mins
add garlic, sauté 2 mins
while you are preparing meat, heat up tomatoes, beans, broth, and thyme in a pot
add meat and leeks
simmer 1.5 - 2 hrs
garnish with parsley or fresh thyme
