Pumpkin Cupcakes with Cream Cheese Frosting 
(Adapted from Ming Makes Cupcakes)

Cupcake
Mix:
1 C flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
pinch nutmeg
pinch cloves

Mix:
2/3 C sugar
2 eggs
Add:
1/2 C oil, mix for 3 minutes

Add flour mixture.
Then add:
1 C canned pumpkin

350 for 30 mins

Frosting:
Mix:
1/2 block room temp cream cheese
1/4 C room temp butter

Gradually stir in 1/2 C powdered sugar.
Add 1/4 tsp vanilla extract.

Top with crystalized ginger.
