cosy times cake

Even though temperatures are rising, and flowers are blooming, it's still pretty damp, grey, and blah around here. So the ingredients of this cake spoke to me. A last hurrah of winter spices, and a hint of rum. The only change I made was omitting the molasses and turbinado sugar. I used brown sugar in the apples. Not quite picture perfect (I'll blame the fact that I don't have a mixer), and somewhat labour intensive, but pretty tasty.

I also served this cider, which I recommend. One of my guests said it tastes like apple champagne. Very light and refreshing.
