Dinner with my pal Jeannette. My first attempt at making burgers – baked in the oven (800g ground chuck makes six, 475 for 15 mins). I used Indian spices and topped with mint yogurt sauce on a brioche bun. Dessert was lime tart, which turned out un-photogenic (too many bubbles, sad crust), but is super easy to make, and tastes great. Next time I would make a ginger cookie crumb crust (and not beat so many bubbles into it).

Lite Lime Tart

pastry base of choice
1 can sweetened condensed milk light
juice and zest 6 limes
3 egg yolks

Gently blend condensed milk with egg yolks, and then zest and juice. Pour mixture into pastry base (knock side to release bubbles). Bake for 20 minutes at 350. Remove from the oven and allow to cool. Then chill well for at least 1 hour. Serve with whipped cream and/or fresh berries.
